Spicy Pineapple Glazed BBQ Chicken Skewers

Ingredients:

  • 4 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup pineapple juice
  • 1/2 cup ketchup
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sriracha sauce (adjust to taste)
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • Wooden skewers, soaked in water

Instructions:

  1. In a bowl, combine the pineapple juice, ketchup, soy sauce, brown sugar, apple cider vinegar, sriracha sauce, minced garlic, smoked paprika, black pepper, and salt. Mix well to create the marinade.
  2. Place the chicken cubes in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or preferably overnight to allow the flavors to develop.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated chicken onto the soaked wooden skewers, dividing it evenly among the skewers.
  5. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
  6. While grilling, baste the chicken skewers with the leftover marinade to enhance the flavors.
  7. Once the chicken is cooked, remove from the grill and let it rest for a few minutes.
  8. Serve the spicy pineapple glazed BBQ chicken skewers with a side of grilled pineapple rings and a sprinkle of chopped cilantro for garnish.

Note: You can adjust the level of spiciness by increasing or decreasing the amount of sriracha sauce according to your preference.
